GOLD RUSH BUTTERMILK POUND CAKE RECIPE

The secret of this amazing pound cake recipe starts with a wooden spoon and the butter.

In a large bowl, cut into small pieces three (3) sticks of butter.

Add zest from two (2) lemons and a pinch of pink sea salt.

Using a wooden spoon whip the butter and lemon zest together until nice and creamy.


Cover with plastic wrap and allow your butter to sit for 24 hours.


Once you have allowed your butter to rest for 24 hours, it’s time to preheat your oven to 325° and lightly oil and flour the cake pan and set it aside.

Let’s make your cake batter!

To your butter you’re going to add:
- 6 eggs
- 2 cups of granular sugar
- 2 cups of powdered sugar
- 3 cups of flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 cup buttermilk
- juice one (1) lemon
- 1  teaspoon of vanilla
- 2 tablespoons of boiling hot water

Before you get started make sure your eggs and buttermilk are at room temperature and that you mix your batter with your wooden spoon.

First, beat one egg in at a time into the butter until your butter and egg mixture is a light, fluffy, pale yellow color after you've mixed in each one of your eggs.

Now, add in your sugar one (1) cup at a time. Be sure to mix well! This may take a little extra time because you’re using your wooden spoon, but it’s well worth it. Make sure that your sugar and butter mixture is well incorporated.

Up next is your flour and buttermilk.

In a separate bowl, add your baking powder and salt into your flour.

Once you've creamed your butter an eggs, alternate adding your buttermilk and spoonfuls of flour. (Flour > buttermilk > flour > buttermilk > flour)

Last but not least, add in your lemon juice and 2 tablespoons of hot water. Give your batter one final stir.

Spoon the batter into your cake pan. Sift a tiny amount of powdered sugar over the top of your batter.

Place cake pan in the oven and cover it with a sheet of parchment paper. Bake for 1 hour and 15 minutes (75 minutes).

At this point check your cake by inserting a toothpick nearest the center of the cake. The toothpick should come out clean.


*DO NOT remove you cake at this time*

Turn off your oven, open the door, and allow the oven to completely cool before removing your cake.

You can enjoy this delicious cake plain or you can add a glaze!

GLAZE RECIPE
- 1/2 cup powdered sugar
- 2  teaspoons of melted butter
- 2-3 tablespoons of butter milk

Add  lemon zest and stir until nice and creamy. Drizzle the glaze all over your cake while it’s still warm. *if you like your glaze to be a little thinner simply add more buttermilk*
